Quite frankly one of the most memorable dining experiences I’ve ever had.  Chef Michael Statlander creates magical experiences using local ingredients and his incredible imagination.  Being in the top ten best restaurants in the world, guests have been known to fly in for an intimate dining experience.  There is no website, no credit or debit card services, no liquor license, and no menu and is extremely hard to find.  It is really like being at a friend’s house for dinner; except there is a world class chef in the kitchen.  Statlander has apprentices from all over the world with him in the kitchen; his wife, Nobuyo runs the dining room.  When I called to make a reservation Nobuyo requested that I mail a check for the dinner in the amount of $250 per person and to bring my own alcohol.  I also have to mention to you that reservations are taken several months in advance, so be prepared.  It is quite a distance away so I think you have two viable options; have them recommend a bed and breakfast nearby and a shuttle will take you to the farm or a limo service to and from.  There are only 12 tables and 8 courses in the candle lit dining room complete with a roaring fireplace.  Statlander changes his menu every night and only serves dinner two to three times a week.  I went in November, on a Sunday, dinner was at 6pm.  My menu: amuse-gueule (a single bite-sized hors d’oeuvre), venison consommé, foie gras with rabbit, white fish, sorbet, cheese, dessert and petit fours (little chocolates).  Most of what you will be eating comes straight from his farm; his son even cooked the freshly caught white fish on the fire in the dining room, beside my table.  Even the rabbit was killed 5 days before and hung to drain.  After the meal Michael comes to every table and talks to you about your experience, his ideals, and invites you for a tour of his kitchen.  I can only tell you that eating at Eigensinn farm has changed me as a person, made me grow more respectful and gain admiration for the beauty that surrounds us.  If you are able to, you must go, be moved and inspired to enjoy life.
