This evening, I am joined by fellow media and friends for an interactive knife-skills seminar, led by Celebrity- Chef Jonathan Collins and Savour- Chef Matt Robertson of Montecito, both of whom shared their unique take on summer-fresh, family style cooking. During this wonderful experience, I learned so much about the importance of sharp knives when it comes to “Culinary Delights” (no pun intended!). I personally had no idea at just how clueless I was when it came to sharpening knives!
Take for instance the token metal rod, shown in movies and food TV shows as the knife sharpening way. I like so many was mislead. The long metal rod is actually called Honing Steel. Zwilling has a TWIN® SHARPENING STEEL which has a ground surface that enables repairing or straightening of a fine steel knife, slightly magnetic so it picks up particles of metal removed from the knife during honing. To put it simply, these tools are meant more to maintain, not sharpen!
Most of my knives are super dull; so, this was a perfect opportunity to get things sharpened. TWIN® STONE PRO is a sharpening stone, or “whet stone” which is the best method of sharpening fine edge knives because it allows full control of the elements. As you apply 6 lbs of pressure at a 15 degree angle, black dust collects but do not wipe away because it is essential for sharpening. Technical? Yup. Effective? Definitely!
One timeless lesson that I learned is to lengthen the life of your blade by avoiding metal, marble or granite cutting boards as they dull the steel at an alarming rate.
