I love this spot. Located in the Distillery District of Toronto, Pure Spirits Oyster Bar and Grill shucks a wide variety of East and West coast mollusks. Sometimes you find a rare variety, like the European flat Belon or the Olympia, both having a dry metallic taste.
Alongside any oyster one should have bubbles. Not sure why but sparkling wine really enhances their salty, briny, buttery, metallic, or even fruity flavours like cucumber and melon.
Here’s a word of wisdom: don’t ever let anyone tell you NOT to order one of each variety on the menu because you won’t be able to tell the difference (said stupid bartender at Rodney’s). Oysters are like fine wine, that vary in flavour from regions and varieties. I don’t put anything on my precious little oyster friends . They are also extremely nutritious. Six oysters contain 31% of daily recommendation iron and are good source of magnesium and phosphorus, and a very good source of protein, vitamin D, vitamin B12, zinc, copper, manganese and selenium. So GOOOO OYSTERS!!!
