This was truly a Summerlicious journey, from start to finish at Azure inside the Intercontinental hotel. First an intro to the menu, complete with wine pairings and then a stay at the hotel. I’m so happy and thankful for this experience. Our media event was an incredible cozy intimate dinner with the city’s finest bloggers – here is what we sampled…
First up the canapes and signature drink, the Watermelon Margarita as we got to know each other. Smoked salmon bilini’s with dill,
a maple-apple-walnut goat cheese rosette and a roasted grape duck roll.
For the first course we chose the crispy fried crab with creamy corn and the watermelon salad. Green pea shoots and sauce works together to balance the sweetness of the crab and saltiness of the dressing. Watermelon salad is always a delight and something to wow your friends with – the contrasting textures are quite an experience.
Elk Cove wine pairs best with the crab cakes and the blend pairs well with the sweet-salty salad. Love the pine nuts!
Next up are the mains. Dillion’s Rye barbecued glazed duck breast over wheat berry salad, drizzled with cilantro yogurt, finished with peach and cucumber salsa – best with Sangervasio wine. Pan seared pickeral is best with the Le Crema wine, combining the light delicate fish with rustic potato darphin, rataotouille, nutty macadamia and lightly spiced red chili pesto.
Desserts are a showstopper, an ending working well with a nice glass of ice wine from Trius.
Limoncello cherry pie combines tart ripe fruit with sweet cream; the crust flakes effortlessly – this is talent. The Lindt chocolate s’mores parfait is a rich sticky mousse, crusted with a graham crumble – SUPER sweet.
After an incredible dinner we had a few gin martini’s at the bar – stirred not shaken.
When we got back to our room we discovered a treat! Bailey’s and chocolate covered strawberries coated in various flavours.
